When it comes to exotic fruits, the dragon fruit, scientifically known as Hylocereus, is a true showstopper. Originating from Central America, this cactus is a unique plant that can thrive both in the soil and among treetops. With over seventeen varieties and a range of hues from white to rich purple, the pitahaya, as it is called in Spanish, adapts to diverse altitudes, ranging from sea level to heights of 1,800 meters. The most exceptional specimens are typically found about 800 meters above sea level.
In Costa Rica, dragon fruit is exclusive to regions with well-defined dry seasons, stretching from the northern province of Puntarenas to Guanacaste, which means those of us living in town are in luck because this delicacy is readily available in the area once it is in season.
A Botanical Wonder
The dragon fruit is a plant comprised of several long, sturdy stems. In its most intricate form, a single dragon fruit plant can develop a massive network of hundreds of stems that sprawl in all directions, resembling a dense and intricate tangle.
The plant's large, solitary flowers make their appearance at the onset and throughout the rainy season. Each mature stem can produce up to ten flowers per season. These flowers, one by one, unfurl over six to eight months during the rainy season. When fully open, they emit a powerful and exquisite aroma reminiscent of jasmine, which can be detected up to 100 meters (about 328.08 ft) away. Several blossoms have been spotted in the area, so we know the season is close.
A Healthy Indulgence
The dragon fruit itself is a remarkable sight. It can grow up to fifteen centimeters in length and is green in its youth, gradually transitioning to a vibrant red or yellow when ripe. The fruit boasts large, triangular, green, and fleshy scales at its tip. Under the thick and fleshy shell lies a soft, juicy, and translucent pulp, like grapes. Scattered uniformly throughout the pulp are numerous small, round black seeds.
