Tamaki, Las Catalinas’ highly anticipated restaurant, has been creating quite a buzz, and during a recent menu testing, Chef Brian Tan, an original student of the Nikkei movement, shed light on the unique culinary style they are poised to offer, a first in Guanacaste, Costa Rica.
Nikkei cuisine is a fusion that blends Japanese culinary traditions with the bold flavors of Peruvian ingredients. This concept was spearheaded by the renowned celebrity chef and owner of the legendary Nobu restaurant chain, Nobu Matsuhisa. The term "Nikkei" is affectionately used to describe immigrants of Japanese origin in Peru and the delightful dishes they create in their homes.
Chef Brian's journey into this culinary realm was guided by none other than Chef Nobu, pioneer of the Nikkei movement, before Brian embarked on his own ventures, including his YouTube Channel, Cocinando con Brian.
At Tamaki, expect a tantalizing array of classic Nikkei creations, from tiradito, a marriage of sushi and ceviche, to comforting ramen, and dishes like Yakimeshi, a Japanese-style fried rice.
One dish that truly stole the show during the tasting was the salmon nigiri de salmon. This creation features gratin cream cheese, chimichurri, sweet salsa (crafted from kombu, soy, and sugar), and quinoa popcorn. The flavors and textures in this dish perfectly encapsulate both Japanese and Peruvian cuisine.
