After last week's ever present wind, this week has been relatively mellow, which looks to continue today until after sunset. The other news in town today is a cooking class at the Beach Club, based around The Art of Fermentation. Lead by Chef Gilberto Briceño, whose journeys through Scandinavia and South America before returning to Costa Rica have helped give him a unique perspective on fermentation, this course will definitely be an interesting and educational experience.
