In this Daily -- Cuba Libre and the Art of Fermentation

A warm day today with a back and forth breeze and steady temperatures, falling off slowly for a beautiful sunset this evening. It'll be a great morning to be out on the trails, and a great afternoon to be in the water.

Last night was another edition of the Alma Viajera Pop-Up series, taking a trip out into the Carribean for a taste of Cuba Libre. Highlights were the grilled vegetables seen above, patacones, plantain desserts, and the main event, a whole roast pig slowcooked underground. Stay tuned for news about next week's edition in the coming days.

However, to dive back into the world of cooking you'll only have to wait until tomorrow afternoon, where Chef Gilberto will be hosting a cooking class on the Art of Fermentation. It's an area that Chef Gilberto has a particular experience in thanks to his travels in Scandinavia and South America, and it should be a great class. To register, just reach out to Concierge.
